Job Description:

Summary: Reporting to the Associate Winemaker, the Lab2/Cellar2 is responsible for work under little or no supervision. The position is primarily (approximately 75%) focused on performing advanced and special analysis of grapes and wine according to the NCWC/MDWS Laboratory Standard Operating Procedures. Responsibilities will include preparing samples and performing routine and non-routine analyses on juices, musts, fermenting wines/finished wines, reporting data into our data management system as well as maintaining a safe and clean laboratory environment. The Lab2/Cellar2 will also perform various cellar and record-keeping functions that include grape receipt, crushing, additions, pressing, filling, topping, wine movement, the operation of winery machinery under safety guidelines, and entry into and maintenance of our winery data management system. Lab2/Cellar2 will act as liaison between the lab and the cellar.

Essential Duties and Responsibilities (Lab):
•  Collect representative samples from tanks and barrels.
•  Perform daily analyses on juice and wine samples using a variety of manual and automated methods.
•  Process and test vineyard grape samples for ripeness.
•  Setup of tastings and trials.
•  Properly maintain instruments and test systems.
•  Follow standard operating and safety procedures.
•  Promote and practice safe work habits, report potential safety hazards, operational inconsistencies, and team member incidents to the Winemaker.
•  Troubleshoot and solve problems.
•  Train and direct entry level and seasonal team members to follow lab policies and procedures and adhere to standard operating procedures.
•  Prepare analytical reagents as necessary.
•  Compare historical analysis, check molecular SO2 and target SO2.
•  Perform Tank Health/Skim and Spritz checks for visual observations of wine health.
•  Maintain an organized and clean working environment.
•  Monitor inventory depletion of reagents/consumable goods and reports shortages.
•  Pull and organize shipment of inhouse and bulk wine samples.
•  Support winemaking activities in cellar as needed.
•  Fulfills requests from winemaking staff.


Essential Duties and Responsibilities (Cellar and Record-Keeping):
•  Operate pumps to receive juice, perform pump-overs and rackings, and blend final products.
•  Prepare and pitch yeast additions to must and juice.
•  Handle grape/juice deliveries.
•  Make chemical additions to juice and wine.
•  Safely operate forklift to move tanks, barrels, and equipment.
•  Obtain lab samples as needed.
•  Operate crusher, presses, and other equipment.
•  Collect wine/juice samples and general support for the laboratory
•  Maintain quality standards in all areas of wine production.
•  Adhere to and advance good safety practices.
•  Maintain and confirm a sanitary and micro-biologically stable work environment.
•  Clean, sanitize, and sterilize all winery equipment and facilities.
•  Follow all Cellar Standard Operating Procedures (SOPs).
•  Ensure sanitation of all areas of cellar operation.
•  Perform other related tasks as necessary.
•  Aid all staff in maintenance of facilities and grounds as relates to cellar.
•  Other duties as assigned.
